Job Description

Boka Restaurant Group and Michelin-Starred chef, Lee Wolen, are seeking a  Sous   Chef to join the team at  GG’s Chicken Shop in the Southport Corridor.  This is a full-time leadership role responsible for overseeing both back-of-house cooks and front-of-house cashiers in a fast-paced, high-volume quick-service restaurant.

RESPONSIBILITIES:

  • Lead daily BOH and FOH operations, managing line cooks, prep cooks, dishwashers, and cashiers.
  • Maintain prep lists, line checks, and daily operational systems to keep the team on track.
  • Oversee prep, service, and food quality, from recipes to plating consistency.
  • Manage staff schedules, training, and performance expectations.
  • Ensure proper food safety, sanitation, and organization standards are met.
  • Support takeout and catering operations to ensure accuracy, timeliness, and quality of off-premise orders.
  • Handle guest concerns with professionalism and care.
  • Complete administrative tasks such as end-of-night closeout sheets and cash handling.
  • Oversee POS usage and accuracy for cashier transactions, closeouts, and reporting.
  • Communicate with the Chef De Cuisine, Director of Operations, and Culinary Director to address issues quickly and effectively.
  • Assist in ordering and inventory management, ensuring efficient food and beverage cost control. 

QUALIFICATIONS:

  • 2–3 years of experience in a Sous Chef role, with Quick Service Restaurant (QSR) and takeout / catering operational experience strongly preferred.
  • Strong leadership skills with patience and empathy.
  • High standards of cleanliness and organization.
  • Ability to manage both BOH and FOH operations effectively.
  • Comfortable with administrative and guest facing responsibilities.
  • Experience in mass-volume production preferred.
  • Flexible schedule with ability to work nights and weekends (we are open from 11am-9pm daily).

PHYSICAL REQUIREMENTS: Lift and move up to 10 pounds; frequently lift and/or move up to 25 pounds; and occasionally lift and/or move up to 50 pounds. Safely and effectively use all necessary tools, equipment, and cleaning chemicals. Stand and walk for an entire shift, including moving safely through all areas of the restaurant which may include stairs, uneven, and/or slick surfaces. Ability to bear exposure to hot and cold environments.
